Rendered pork lard from heritage breeds is a versatile cooking fat known for its rich flavor and nutritional benefits. Heritage breeds, such as Berkshire, Red Waddle, and Mangalitsa (like ours) are raised in a more traditional manner on pasture, and are known for their higher fat content. This results in lard with a more pronounced flavor and potentially higher levels of beneficial fatty acids compared to commercially raised pork. 

Lard is a source of bioavailable Vitamin D and monounsaturated fats, which can be beneficial for overall health, according to scientific studies.

HERITAGE PORK: MANGALICA, RED WADDLE & BERKSHIRE CROSS BREED

We raise Heritage pork because it is incredibly juicy and has a fantastic flavor, unlike what you find in stores! Our pork comes from a cross breed of traditional Heritage breeds: Mangalica, Red Waddle & Berkshire because they are prized for their well-marbled, toothsome, flavorful meat, not to mention a wickedly decadent abundance of fat. Heritage breed hogs are the old-fashioned breeds that were the norm before the industrialization of farming.

At Sage Mountain Farm, our Heritage pigs are raised in dirt & pasture (not concrete like conventional farms). We believe that animals raised in fresh air and sunshine with room to roam produce the highest quality, best tasting meats. Our pigs enjoy thousands of pounds of vegetables, crop losses & plant material from our small farm and “throwaways” from partners like Feeding San Diego. Our pigs also enjoy large amounts of avocados (culls that have a dent or bruise), Beer mash (spent grains) from our local breweries, Beans & graze on irrigated pasture made up of Clover & Fescue grasses. This diversity boosts a larger range of nutrients into their diet while implementing sustainable & regenerative farming practices.
